The Best Homemade Pizza Dough

My husband's family has a wonderful tradition of making homemade pizza every Saturday night. My kids have grown up looking forward to (and expecting) dad's homemade pizza. Store bought, takeout, or restaurant quality just won't do. And I have to be honest, we are from Chicago. Chicago knows how to make a pizza. But nothing compares to our homemade crust. I'll tell you there's a secret — it's all in the flour.




The Best Homemade Pizza Dough (no special or fancy tools necessary).

Ingredients:

1 1/4 cup lukewarm water

1 packet instant yeast (or 2 1/4 teaspoons)

1 teaspoon salt

1teaspoon sugar

4 cups flour (preferable 00 extrafine flour)

2 tablespoon extra virgin olive oil


Step 1: Place yeast and sugar into bowl with water. After five minutes add salt.

Step 2: Add flour, roughly 1 cup at a time, mixing into water.

Step 3: Add 2 teaspoons olive oil.

Step 4: Cover loosely with a clean cloth and allow to rise at room temperature for one hour.

Step 5: Use a rolling pin or your can knead or spread it by hand. Spread it in all directions on to a lightly oiled pizza pan or baking sheet.

Step 6: Once it's spread out on a pizza pan or baking sheet, allow it to rise again for 10-15 minutes.

Step 7: Pre-bake at 425 (without topping for 5 minutes.

Step 8: Add your favorite toppings and bake for 7 minutes more.

Now the secret ingredient is Antimo Caputo Italian Superfine "00" flour. Trust me! This makes all the difference!
